The motto of this class - do you think Salads are boring? Are they just cut-up fruits and vegetables? You know they're good for you. But you're just not able to convince yourself to eat them? Well then you're doing it wrong! Chef Smriti is here to break it down easily for you so can not just make the Salads she makes, but also create your own to your liking.
Breaking down a Salad :
1. Bulk
2. Protein
3. Carbohydrates
4. Fats
5. Dressing
6. Toppings (micronutrients)
With these principles we will make 4 Salads in the class -
1. Desi Winter Root Salad
Beetroot, Raddish, Carrot, spinach, Moonglow sprouts, Makhana with Chili Tadka Dressing
2. Rainbow Salad
Purple Cabbage, Romaine, Star Fruit, Red Capsicum, Corn, Tofu with Yogurt Kasundi Dressing
3. Savory Strawberry Salad
Rocket, Strawberry, Cucumber, Croutons, Pecorino with a basic no fat dressing
4. SS House Salad
Iceberg, Romaine, Slow Roasted Beet, Orange, pickled onion, Feta, candied walnut and green pumpkin seeds.
Smriti's Special
Smriti’s Special was founded by Pastry Chef and former Architect, Smriti Iyer, in 2014, operating out of her parents’ house. In 2017, the school opened its first official space, AR.CH. STUDIO. Our motto is “There are No Rules.”
At SS School, we prioritize detailed education, from the basics to intermediate and advanced techniques. Our students are encouraged to be inquisitive and experimental to explore new flavors and designs. We have taught over 4000 students, both online and in-person, in 8 cities across India, including Delhi/NCR, Mumbai, Pune, Bangalore, Chennai, Ahmedabad, Hyderabad, and Chandigarh.
